I’m so excited! You don’t know how long I’ve wanted to do it and could never get it to happen.
I made homemade Pasta!!! WhooHoo! Ok… I know its not a major accomplishment, but really, it is…. Especially since I’ve been intimidated by it for far too long. 🙂 Well, not by the dough, just by the pasta machine we have… looks a little like a medieval torture rack! And… it turned out so great! The secret is really to chill the dough at least 30 minutes before trying to put it through the pasta maker. For the dough, I followed Giada’s video on how to make it. Brilliant! She makes everything so easy… Sheesh I’ve got the cooking show bug bad don’t I?
Anyway, finally, I was able to accomplish the task, which turned out to be much easier than I’d envisioned. After letting it dry, I had a dinner of homemade pasta topped with a cheesy white sauce with mushrooms (I would have used our jar of Alfredo sauce but it had MSG in it), and a small salad. Completely yummy!! The rest I put into a ziplock bag and will use this week.
You can then freeze them (laid out on a baking sheet – then after they are frozen, put into a single air tight container) or refrigerate them if you plan on using them quickly.
For a storage tip, when you’re making quite a bit of pasta, you might want to form small nests or knots by dusting the pasta lightly with flour (very lightly) and forming the nests gently while the pasta is still pliable. You can then freeze them (laid out on a baking sheet – then after they are frozen, put into a single air tight container) or refrigerate them if you plan on using them quickly.
Throughout the day my little helper was right there ready to act as the kitchen floor vaccuum, just in case something should drop!
