Wow, what a yummy dinner I just had! Pork Medallions marinated and grilled, with carrots sauteed with portobello mushrooms and green onions and finished with a small green salad.
For the pork, I used a pork loin roast that I sliced thin, but you can use almost anything as long as it’s thin. I made the marinade using 1 TBS lite olive oil, 2 garlic cloves put through a garlic press, 2 tsp. crushed dried cilantro, 2 tsp. herb vinegar. Toss the pork into the marinade and let sit for at least an hour.
Meanwhile peel and slice carrots longways, about 2 inches long. Steam until just barely tender. Saute portobello mushrooms (I used 3 very small ones) with 2 sliced green onions in about 2 TBS butter, after about two minutes add in the carrots and continue the saute until done, last minute or so turn up the heat to caramelize slightly. I added a dash of kosher salt but that’s optional.
Grill the pork (I used a stove-top grill) until just done, serve with carrots and salad. Yummy………….
Note, this was enough for 2 people, to make more, double the ingredients.
Definitely something to make later when Michael and Crystal come home. Too bad it looked so good when I finished, I forgot to take a picture for you! Oh well, next time.
